
Place the tomatoes into a medium pot . Put enough water in the pot to cover the tomatoes. Remove the tomatoes. Place pot on stove and boil the water. When the water is boiling, place the tomatoes back in the water. Boil the tomatoes until the skins start to peel away. Remove the tomatoes with a slotted spoon and allow to cool so they can be handled with you bare hands.
While the tomatoes cool, chop the onion, garlic and cilantro and place into a medium mixing bowl Add the salt, vinegar and lime juice.
Take one tomatoe at a time and squeeze out the juice and seeds from each. Chop the tomatoes on a cutting board and add to the the onion, garlic, lime mixture. Place bowl in the fridge and allow to cool. This will allow the the flavors to come out of the various ingreients. Stir before serving, adjust the season, add salt, addition lime juice to taste. Stir before serving.
