
2-1/2 pounds ground pork
1 teaspoon Kosher salt
2 teaspoons garlic powder
1/4 teaspoon ground black pepper
1 tablespoon paprika
1/2 teaspoon fennel seed
2 tablespoons crushed Ice or ice water
2 teaspoon red pepper flakes
1/4 teaspoon anise seed
2 tablespoons vegetable oil
Place the ground pork into a large bowl. Season with salt, garlic salt, black pepper and paprika. Add in the ice or ice water. Then add oil, anise seed, fennel seed and red pepper flakes. Mix everything until well blended with a wooden spoon, heavy fork or whatever works for you! Refrigerate for 24 hours to let flavors blend.
